An Eco-Culinary Retreat in Greece

What ends up on the plate begins somewhere in the land and sea. This program finds that somewhere.

​

The Chef's Palate is a program for people who want to understand where food actually comes from and what a chef does with that knowledge. Over eight days, a small group works and learns alongside Chef Evan Mallett as he moves through markets, farms, and open landscapes, asking the questions he has always asked: who grew this, what did it take, and what does it want to become? In the field, the group is joined by forager and wild foods educator Rachel Alexandrou, who leads the foraging work. The program ends with a meal the group plans and prepares together.​

Eight days. Twelve participants. Registration starts May 1, 2026

What to Expect​

  • Intimate group of up to 12 participants

  • Market walks with Evan: learn how he reads what is worth cooking

  • Foraging with Rachel Alexandrou, wild foods educator: what grows here, what is edible, and what a cook does with it

  • Time with the farmers and makers behind the food, and Evan's thinking on who he chooses to work with and why

  • A culminating meal the group builds together, drawn from everything encountered along the way

  • All logistics handled by Meraki Travel Experiences

The program is fully inclusive once you arrive: boutique accommodations, ground transport, most meals, and all program activities.

About Chef Evan Mallett

​

Evan Mallett is the owner and executive chef of Black Trumpet in Portsmouth, New Hampshire, and the author of Black Trumpet: A Chef’s Journey Through Eight New England Seasons. A six-time James Beard Award nominee, one of the most significant peer-recognized honors in American gastronomy, his cooking is rooted in a lifelong practice of foraging, fishing, and sourcing, built on decades of relationships with the farmers, fishermen, and makers behind his ingredients.

About Rachel Alexandrou

Rachel Alexandrou is a forager and wild foods educator with deep knowledge of the edible landscapes of the American Northeast and the Mediterranean. Her work is rooted in the field: identifying, harvesting, and teaching others to see what grows around them and why it matters at the table.
